IL LIEVITATO
It is an artisanal dessert with natural leavening, created from the imaginative creativity of Chef Giancarlo Morelli using the rennet apple, which defines its softness and sweetness. The apple is deeply connected to the primitive and ancestral meaning of birth, beauty and wonder; it is the marvelous fruit of the tree of life.
THE MAKING OF THE LIEVITATO
The making of the “lievitato” begins with the preparation of the so-called “madre” (mother dough); the natural yeast is obtained from a fermented mixture of water and flour that is left to rest and then refreshed several times.
Once this process is complete, the actual dough-making begins with the addition of top-quality ingredients: flour, fresh eggs, dark chocolate chips, candied apple and ginger, sugar, water, and finally butter.
After 15 hours of leavening, the second working phase begins; at this point, natural aromas composed of honey, orange, lemon, vanilla, cinnamon, lime and bergamot are added. The dough is divided into individual loaves, left to rise for about eight hours and baked in the oven. After baking, the “lievitato” is left upside down to cool for an entire night.

It is possible to personalize the box by placing your own brand on the box lid. Personalization can be done through the application of stickers or by reprinting the lid.
